Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper to keep things tidy.

  3. Arrange the pastry squares evenly on the prepared baking sheet, spacing them about an inch apart for room to puff.
  4. Place a small piece of brie (about half a teaspoon) onto the center of each pastry square, pressing gently to settle the cheese.
  5. Top each piece of brie with 2-3 fresh cranberries, pressing them down slightly so they sit nestled into the cheese.
  6. Bake in the preheated oven for 12 to 15 minutes, or until the pastry is golden and puffed, and the brie is bubbling and slightly browned.
  7. Once baked, remove the tray from the oven and let the bites rest for about 2 minutes—this helps the cheese set slightly and prevents burns.
  8. If desired, drizzle a little honey over the warm bites for added sweetness, and garnish with fresh thyme or rosemary for a fragrant touch.
  9. Transfer the bites to a cooling rack if needed and serve warm or at room temperature for the best experience.
