Ingredients
  

  • 2 cups fresh pineapple, chopped ripe and juicy
  • 10 leaves fresh mint leaves bright and aromatic
  • 2 tablespoons honey natural sweetness
  • 1 squeeze lemon juice brightens flavor

Method
 

  1. Place the chopped pineapple, mint leaves, honey, and lemon juice into your blender.
  2. Blend everything together until the mixture is smooth, about 30 seconds, and the pineapple is fully puréed with the mint evenly distributed.
  3. Taste the mixture and adjust the sweetness if needed by adding a bit more honey, then give it one more quick blend.
  4. Pour the vibrant, fragrant mixture into your popsicle molds, filling each about three-quarters full to leave room for expansion.
  5. Insert the popsicle sticks into the molds, making sure they stand upright and are centered.
  6. Place the molds in your freezer and let them chill for at least 4 hours, or overnight for best results, until the pops are fully frozen and firm to the touch.
  7. To serve, briefly run warm water over the outside of each mold to loosen the pops, then gently pull them out.
